olive oil from Greece! Cold-pressed
at harvest, the oil is sourced from
the winery's estate-grown Koroneiki
olives, which are considered the
finest in Greece. The flavor is
fruity, with aromas of ripe pear,

oil for vegetables, as a wonderful
complement to Mediterranean salads,
or on its own with fresh bread.

This organically cultivated blend
of Moraiolo and Frantoio olives
is cold-extracted (for the freshest
taste) and unfiltered. Emerald green
from the bottle, the oil's aroma
is fruity, with aromatic notes of

and slightly piquant, particularly
when freshly pressed. Drizzle over

Vignalta's 2005 extra
virgin olive oil is pressed from
Rasara, Moraiolo and Marzemina
varietials grown in the Colli
Euganei. The blend is typical
of the Veneto region, producing
a delicate, light fruity oil with

and a slight, delicate bitterness.
It is perfect on salads and for

red wine vinegar. Vignalta's Aceto
di Vino Rosso is produced exclusively
from a small lot of Colli Euganei
Rosso Vignalta, from the Villa
dei Vescovi vineyard in Luvigliano.
The wine is aged for three years
in small oak barrels, followed
by acetic fermentation with new
grape clusters. Finally the vinegar
is aged for one more year in small
oak barrels. The result is a natural,
undiluted vinegar that is smooth,
balanced and authentic. Pair with

Why Would A Wine Shop Sell Olive Oil?
In our journeys, we've
found that some of the best wine estates
also produce amazingly complex, rich
and flavorful extra virgin olive oils.
The estates lavish the
same care and devotion on their olive
oils as they do on their famous wines.
These oils are created as distinctive
vintages -- some are even single-varietal
bottlings. They can be tasted, rated,
even paired with specific foods.
We enjoy the chance to
share some of our discoveries. Most
of these oils are in limited supply,
available to us as vintages come to
market. We'll continue to select and
offer the finest ones we find. Enjoy!
Note: Estate-quality
olive oil is suitable for longer storage
if stored at constant temperature, away
from light and heat sources.
