Gaillac is also set on the Tarn River, which once ferried Gaillac’s wine to Toulouse, then to Bordeaux and the world beyond. The city of Bordeaux put a stop to all that when they started making their own serious wine in the eighteenth century, but Gaillac – like so many other corners of Southwest France – remained, selling their wine to the brisk local market. Damien Bonnet was born on his family’s traditionally minded winery, but when he came of age he chose to explore biodynamic viticulture and low intervention winemaking with a spirit of pure curiosity. Wines like this prove the hard work was worth it. It’s a blend of mostly native grapes – Duras, Broucal and Prunalert – and shows an expansive aroma of blackberry and raspberry, black olive tapenade and clay soil with a bit of orange peel. Orange and black fruits step forward on the palate, with fresh acidity and chalky tannins building on the finish. When Benoit Meyer inherited the 500 year old Chateau in the 1990s, he wondered if he could raise the level of the estate, noting it had soil very similar to that of nearby Pomerol. With a little extra care and attention the wines started to show depth and elegance that you generally have to pay $40 or $50 to find in Bordeaux. This might be Chateau de Cugat’s entry tier wine, but it is remarkable. The nose offers rich tilled earth, blackberry and blueberry and black plum, cinnamon, and countryside aromas of tobacco leaf, tomato patch, bay leaf. The change we’ve seen in the last decade is that growers are returning to the highlands, the limestone “Causses” of the southern half of the appellation. From the 14th century to the 19th century, it was the elegant Malbec from these plateaus that made it one of France’s most famous wines. Only when phylloxera and repeated frosts came between the 1880s and 1960s that the region fell into obscurity, vineyards on the plateaus were abandoned in favor of the clay and gravel riverbanks where wines grow dense and dark and brooding. Julien Ilbert is one of a group of young vignerons who are looking to turn back time. Julien’s winery stands on three bedrock principles, strictly organic farming, strictly 100% Malbec, and an emphasis on elegance over power.
