Josef Schenter was born in Kamptal. His family has owned Weingut Schenter for three generations. Julia Nather is from Bavaria, and came into the winemaking trade through the restaurant industry before the pair met working at Schloss Gobelsburg. Upon inheriting control of the family estate, Julia and Josef divided the estate in half, and founded Nibiru to work, bit by bit, towards regenerative farming and zero-intervention natural winemaking. In the vineyards, they have since achieved organic and then biodynamic farming, and they are in the process of moving to a style of viticulture that has no definite name yet, but consists essentially of wild farming based on regenerative principles. Their prized Goldnagl site is already farmed this way, and surrounded with biodynamic sites to ensure there’s no chemical drift. Indigenous plants are left to run wild between the vines, and the compost used is made on-site from grape pomace, horse manure and hay. In the winery, they make their wine with a similar sort of intentional neglect, making no additions ever beyond the occasional splash of SO2 and they leave their various wines to settle far longer than customary. The wines of the Grundstein set are fermented and aged only in stainless steel.
Tasting notes
A smoky sort of Gruner, with deep apple and orange fruits, black earth, and pepper. The lees age gives the wine creamy texture that neatly counters the mineral current.
