Tom Sivilli makes sparkling wine. He makes plenty of still wine too, as the winemaker at Cameron Winery in the Dundee Hills, but his sparkling wines drawn from Abbey Ridge, Temperance Hill, and La Colina vineyards are some of the finest available in the Willamette Valley (or anywhere else, for that matter). One day, after completing a gentle press cycle for his sparkling wine, his girlfriend pointed out that he could leave the press on, press just a little bit harder, and get a whole bunch more juice out of his grapes. He had, after all, already paid for them. The Poubelle (French for trashcan) is the result. Far from a waste product, this rose comes from grapes picked to make sparkling wine, but after Tom takes the most delicate juice for sparkling wine, what remains is an utterly delightful Rose, with fresh aromas of strawberry sherbet, orange and lemon zest. The palate is medium bodied and pure sunshine, with wild cherries and strawberries and zest of the orange that lingers on the crisp, refreshing finish. Serve with cheese plates, with shrimp, or with cedar plank salmon.
