This Traditional Method Norman Cider so utterly transcends the category that we hesitate to even call it cider. If this is what heritage apple varieties are capable of after 30 months on the lees, those fellows over in Champagne better watch out! This, shall we say, 'sparkling apple-wine' has a maddeningly complex flavor, musky and floral and deeply felt, with a strong, earthy finish. It does have plenty of apple flavor, but in the way a Blanc de Blancs Champagne does too.
