Barbadillo is known as one of the premier Sherry houses. They farm Palomino grapes in Andalucia on pure white, sun-blasted soils. None of this shouts “Great sparkling wine”, but here we are, with a traditional method sparkling from southern Spain. The nose offers notes of pineapple, salty brioche, meyer lemon, and chalky soil. The palate is light, with delicate mousse and bright notes of apple, almond, and toast.
