Txakoli from the valley of Getaria is kind of a perfect wine. It is not a famous or fancy wine and it’s not everyone’s favorite, but it is very comfortable being itself. Txakoli will likely always be an inexpensive, thrilling crisp white, born in the deep green valleys that open to the Bay of Biscay on Spain’s northern shore, where the people speak their own unique language called Euskera. Txakoli is not quite like anything else, it doesn’t aspire to be Chardonnay or Chenin Blanc or even Albarino, but in the restaurants of San Sebastien or Bilbao, or a country taverna below Mount Txindoki, Txakoli captures the essence of the place perfectly. No Txakoli we know of is more perfect than the one made by Jose Antonio Mokoroa. Bubbling bright aromas of apple, lime blossom, lemon curd, and sea breeze come before a bracing palate of lemon, lime, and sea water. Perfect, but not that complicated, pair this wine with tinned fish, fresh salads and croquetas.
