Catarratto is a grape so famous for huge crops that is named for the Italian word for a waterfall. When it is farmed the way Francesco farms it, with low yield and high quality in mind, it produces something rare and wonderful, a white wine of striking power and structure. The aroma starts with key lime and preserved lemons with big, flaky salt crystals. The palate is absolutely caked with mineral salts, with intense flavors of apple and lemon zest. Full bodied, with a reverberating finish.
