In the Sierra Morena mountains in northern Andalucia, there is a tradition of making Sherry-like wines in Solera, with a deft balance of oxidative and biological Flor derived flavors. Today, there is only one family still at it, the Nevado family. Their wine is very similar to Sherry, but since they're working far from the economic constraints and pressures of the Sherry triangle, they're allowed to work more or less as they like. It is the only sherry made both organically and naturally, and without fortification (they simply allow their wines to evaporate down to the correct alcoholic levels for flor to thrive. The Palido style is made like a fino sherry. It's awesome.
