Nestled in the rugged countryside of Trevillach in foothills rising into the Pyrenees, Domaine de l‘Encantade looks like it was scooped out of the pages of a fairy tale. Antoine Latipau farms 6 hectares of vines there on rough, rocky soil where wind is constantly blowing between the mountains and the sea. He works completely organically and does most of his work in the vineyard so he doesn’t have to take corrective actions in the cellar. Sans Souci, meaning no worries in French, is very much like its winemaker, fun-loving and irreverent, but quietly resilient. Made entirely from Syrah, the nose offers ripe strawberry, pepper, and bacon aromas, while the palate is delicately structured, with elegant tannins wrapped around strawberries and raspberries, garrigue soil, and smoked meats that linger on the finish. This is a wonderfully balanced red apt for almost any sort of meat dish, roasted vegetables or eggplant parmesan.
