100% Listán Blanco from two sites: Los Frontones, the highest vineyard in Spain at 1687 meters of altitude and Cruz de Tea, located at 950 meters of altitude, both on the south side of the El Teide volcano. The vines from Los Frontones are own-rooted and 80+ years old, and those from Cruz de Tea are 40 years old. The grapes are hand-harvested and pressed directly. Fermentation takes place in stainless steel tanks and wooden foudres, and aged in these same vessels for four months before being blended just before bottling.

Tasting notes: The baseline aroma is of pears, with key lime and salt and grace notes of miso, macadamia and sweet chili sauce. On the palate, the texture is powerfully built, with diamond sharp edges and a rich yet electric mid-palate dominated by high tone lime notes, with orange and savory herbs before a finish containing salty minerality and crisp white fruits.
